Curried Chicken Salad

ingredients

1 1/4 lbs skinless boneless chicken breasts
baked and chopped
3 tbsp extra virgin olive oil
kosher salt
to taste
black pepper
to taste
2 each avocado
mashed
1 tbsp fresh lemon juice
1 tsp curry powder
1 clove garlic fresh
minced
1 cup red grapes
halved
1/4 cup celery
chopped
1/4 cup fresh cilantro
chopped
1/2 cup baby spinach

Preheat oven to 450 degrees.

Lightly coat chicken with olive oil, and season with salt and pepper. On a baking sheet bake chicken till cooked through approx. 20-30 minutes. Let cool, and chop into bite size pieces.

In a large bowl, mash avocado with a fork, stir in lemon juice.

Fold in chicken, curry powder, garlic, grapes, celery, and cilantro. Season with salt and pepper if needed.

Lay spinach on platter and serve chicken salad on top.
