Arugula, Fig & Gorgonzola Salad

1/4 cup medium sweet onion
approximately
2 tbsp red wine vinegar
1 tsp Dijon mustard
1/8 tsp honey
1/3 cup grapeseed oil
2 tbsp olive oil
sea salt
freshly ground pepper
1 bunch watercress
ends trimmed or 5 ounces arugula
6 whole figs
quartered or sliced thinly
3 oz Gorgonzola
or Stilton bleu cheese
roasted walnuts
optional
A wonderful summer salad. Peaches may be substituted for figs and arugula may stand in for watercress.

Begin by preparing the dressing. In a food processor or a small chopper, blend the onion, vinegar, mustard, and honey until very smooth.

Add the grapeseed oil and continue to mix.

Transfer everything into a small bowl and whisk in the olive oil (if a creamier dressing is desired, the olive oil can also be mixed in the machine).

Season with salt and pepper and set aside.

In a large bowl, toss the watercress (or arugula) with salt, pepper, and about one half of the dressing. Use tongs to gently toss the greens until they are coated.

Add the figs and mix lightly.

Place onto salad plates and top with the crumbled bleu cheese. Roasted walnuts may also be applied at the finish.
